Okay amigos, let me share with you my absolute favorite Mexican recipe that’ll have your taste buds doing the salsa! Trust me, once you try these Enchiladas Suizas (Swiss-Style Enchiladas), you’ll be thanking me in your dreams. 💃
Y’all, I discovered this recipe during my trip to Mexico City, and honey, I haven’t stopped making it since! It’s creamy, tangy, and has just the right kick to make your afternoon absolutely perfect. Plus, it’s fancy enough to impress your mother-in-law (wink wink).
Let’s get cooking, shall we?
Ingredients (serves 6):
– 12 corn tortillas
– 3 cups shredded chicken (rotisserie works like a charm!)
– 2 cups Mexican crema (or sour cream if you’re in a pinch)
– 2 cups salsa verde (homemade or store-bought, I don’t judge!)
– 2 cups shredded Oaxaca cheese (or Monterey Jack)
– 1 white onion, diced
– Fresh cilantro for garnish
– Salt and pepper to taste

Instructions:
1. First things first, preheat that oven to 375°F (190°C). Girl, don’t skip this step – nobody likes a cold enchilada!
1. In a large bowl, mix your salsa verde with 1 cup of Mexican crema. I like to call this my “magic sauce” because it literally makes everything better.
1. Warm your tortillas slightly (30 seconds in the microwave wrapped in a damp paper towel – old family secret!).
1. Now for the fun part! Fill each tortilla with shredded chicken and some diced onion. Roll them up like you’re rolling your eyes at bad dating advice – tight and with attitude! 😉
1. Place these beauties seam-side down in a baking dish and pour your magic sauce all over them. Don’t be shy – these enchiladas love a good sauce bath!
1. Top with remaining crema and shower them with cheese. More cheese = more happiness, that’s just science!
1. Bake for 25-30 minutes until the cheese is bubbly and slightly golden. The waiting is the hardest part, I know!
Serve these bad boys hot, topped with fresh cilantro, and maybe an extra dollop of crema if you’re feeling extra fancy (which you should be!).
Y’all, I can’t even tell you how many marriage proposals I’ve received after serving these enchiladas! They’re that good! 💍

Pro tip: These reheat beautifully the next day – if they last that long! Mine usually disappear faster than my ex did when I mentioned commitment! 😂
